Ingredients
- For the Usal :
- 2 cups sprouted matki / moth bean/turkish gram / dew bean
- 1 finely chopped onion
- 1 finely chopped tomato
- 1/2 cup ground paste of fresh coconut, onion, ginger and garlic sauteed together
- 1 tbsp green paste of coriander, green chillies and jeera/ cumin seeds
- 1 tbsp goda masala / black masala
- 2 tsp red chilli powder
- 2 tsp coriander-cumin powder
- 1 tsp haldi /turmeric
- 1/2 tsp hing / asafoetida
- 1/2 tsp rai/ mustard seeds
- small piece of jaggery
- 1 tbsp oil
- salt to taste
- For Serving :
- 1 cup tamarind-date-jaggery sweet chutney
- 1 finely chopped onion
- 1/2 cup of sev
- 1/2 cup of mixed farsan
- 1 tbsp chopped coriander leaves
Instructions
- For the Usal : In a pressure cooker, heat the oil.
- Add the mustard seeds, turmeric, asafoetida and onion. Saute till transparent.
- Add the sprouted matki, tomato, all the masala powders and ground pastes.
- Add around 2 cups water along with the jaggery and salt.
- Put on the lid and pressure cook for 2 whistles.
- Your usal is ready.
- To serve, take a ladleful of usal in a bowl.
- Top it with a spoonful of sweet chutney.
- Add the cut onion, sev and farsan on top.
- Serve hot with pav / bread.
